“Breakfast, shop and cook with a Rajah” is a personalized bus tour from 10.00am to 4.00pm through the Indian shopping and food centres of Sydney, ending with a vegetarian cooking class in Carol’s kitchen. It will be an interesting day looking at all things Indian in Sydney at grass-roots level. The tour will take you to stores and to streets, where you can look at cooked food, fresh and canned ingredients and spices lentils and varieties of rice: basmati from India and Pakistan and red rice from India and long grained Dehradun rice. Here you will find Indian pickles, Pappadams, find fresh paneer or ricotta cheese and typical Indian vegetables: green eggplant, drum stick beans and Ceylon sticky Spinach and Indian green beans in season.The tour will begin with a south Indian breakfast of dhosai, sambar chutney and chai tea. Then we analyse an Indian menu to introduce North and South Indian food terms so that they become familiar with an Indian menu. There will be a vocabulary of Indian terms explained. A visit to a Spice Merchant shop and learn about pulses, lentils and lesser known ingredients called for in recipes. End the day with a vegetarian cooking class at Carol’s kitchen followed by a sit down lunch of Sri Lankan fish curry and string hoppers with a “sothi” sauce. Discussions and questions will follow.
